Castello di Pomino, designed by Florentine architect Gherardo Silvani, houses the estate winemaking cellars. Recognised in 1716 by Cosimo III de’ Medici, Grand Duke of Tuscany, for the excellence of its wines, Pomino has an environment unique for Tuscany, of vineyards, fir forest, chestnut trees, and olive groves. The Frescobaldi family have been producing wine in the region for over three centuries. Best known for their impressive Chiantis and Super Tuscan red blends, this superb white is a mix of chardonnay and pinot bianco, 25% of the grapes, normally the ripest from the harvest, are fermented in oak the rest in stainless steel. Likewise the wine is split in its ageing with most spending four months in stainless steel vats but some spending three months in oak, the wine is then blended together and bottled. The result is a wine full of fragrances of white flowers on the nose with lily and jasmine, followed by scents of white-flesh fruit like apple and pear, the palate matches the white fruit from the nose with rich flavours of pear, peach and even banana are followed by delicate mineral notes, all leading to a finish that is crisp but also long and complex.
