The name Dogajolo was invented by Carpineto’s founders, derived from the Italian word doga, meaning “stave” — the narrow strips of wood used to form oak casks. The Carpineto name is a relative newcomer in Tuscan wines, only starting out in 1967, but they quickly developed a reputation for producing serious Chianti Classico. The term Super Tuscan was created for Tuscan wines that used non indigenous grapes, and this is in a similar innovative style but at a fraction of their price, this is a 'Baby-Tuscan'. Around 30% Cabernet Sauvignon is blended with a majority of the native Sangiovese to create a wine superior to its IGT classification. The two varietals are vinified separately as they ripen at different times and are then blended together in small wooden barrels where they rest for around six months. The nose is fruity with hints of cherry, coffee, vanilla, and spice. It is full and soft on the palate with complex and well-developed flavours and tannins.
